Description

A comforting stew made with ground beef and vegetables, perfect for busy weeknights or leisurely weekends.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth
  • 1 cup green beans, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Combine the browned beef, onion, carrots, potatoes, diced tomatoes, beef broth, green beans, garlic powder, salt, and pepper in a crock pot.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
  5. Serve warm.

Notes

For added flavor, consider sautéing the onions with the beef. You can also add extra vegetables such as peas or corn.
