Ingredients
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1/2 cup refried beans
- 8 corn tortillas
- 2 Tbsp. olive oil
- 1 1/2 cups shredded cheddar or pepperjack cheese
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Cook the ground beef in a medium-sized skillet over medium heat until browned, and drain any excess grease.
- Add the taco seasoning and stir until well combined.
- Incorporate the refried beans into the beef mixture, stirring until combined.
- Remove from heat and let cool slightly.
- Preheat the oven to 425 degrees F.
- Place 6-8 corn tortillas on a baking sheet and brush both sides lightly with olive oil.
- Bake the tortillas in the preheated oven for 3 minutes to soften.
- Divide the beef and bean mixture among the tortillas and sprinkle cheese on top.
- Fold each tortilla over and return to the oven.
- Bake for 12 minutes, then flip and bake for another 10 minutes until golden and crispy.
- Serve immediately with your favorite toppings.
Notes
For extra crunch, lightly toast the corn tortillas before baking.
