Description

Savor the nostalgia of family dinners with these delicious crispy oven-baked tacos filled with seasoned ground beef, refried beans, and gooey cheese.


Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 1/2 cup refried beans
  • 8 corn tortillas
  • 2 Tbsp. olive oil
  • 1 1/2 cups shredded cheddar or pepperjack cheese
  • Optional toppings: sour cream, salsa, guacamole


Instructions

  1. Cook the ground beef in a medium-sized skillet over medium heat until browned, and drain any excess grease.
  2. Add the taco seasoning and stir until well combined.
  3. Incorporate the refried beans into the beef mixture, stirring until combined.
  4. Remove from heat and let cool slightly.
  5. Preheat the oven to 425 degrees F.
  6. Place 6-8 corn tortillas on a baking sheet and brush both sides lightly with olive oil.
  7. Bake the tortillas in the preheated oven for 3 minutes to soften.
  8. Divide the beef and bean mixture among the tortillas and sprinkle cheese on top.
  9. Fold each tortilla over and return to the oven.
  10. Bake for 12 minutes, then flip and bake for another 10 minutes until golden and crispy.
  11. Serve immediately with your favorite toppings.

Notes

For extra crunch, lightly toast the corn tortillas before baking.
