Description

Delicious crispy tacos filled with savory ground beef, perfect for family gatherings and creative assembly.


Ingredients

  • 1 pound lean ground beef (90%)
  • 1 packet of taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 450°F.
  2. Heat a skillet over medium-high heat and add lean ground beef, breaking it up as it cooks.
  3. Stir in taco seasoning and red enchilada sauce, bringing the mixture to a gentle simmer.
  4. Wrap the tortillas in a damp paper towel and microwave for 30-60 seconds to make them pliable.
  5. Brush one side of each tortilla with olive oil.
  6. Place the tortilla on a baking sheet, oiled side down.
  7. Add 2 tablespoons of cheese to the lower half of the tortilla, followed by a quarter cup of seasoned beef mixture and 2 more tablespoons of cheese.
  8. Fold the tortilla over the filling and repeat until all tortillas are filled.
  9. Arrange tacos in a single layer on the baking sheet and bake for 16 minutes or until crispy.
  10. Let tacos cool for 3 minutes before serving.
