Description

A delicious twist on tacos featuring crispy wonton wrappers filled with tender chicken and fresh coleslaw.


Ingredients

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame oil (divided)
  • 1 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 cups coleslaw mix (cabbage and carrots)
  • 2 green onions, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 12 wonton wrappers
  • 2 tbsp sweet chili sauce
  • 1 tsp sesame seeds
  • 2 tbsp chopped cilantro


Instructions

  1. Marinate the chicken: In a bowl, combine the sliced chicken with teriyaki sauce, 1/2 tbsp sesame oil, soy sauce, minced garlic, and grated ginger. Allow it to marinate for ten minutes.
  2. Cook the chicken: Heat a skillet over medium heat. Cook the marinated chicken for about 5-7 minutes or until it’s fully cooked.
  3. Prepare the coleslaw: In a separate bowl, toss the coleslaw mix, sliced green onions, rice vinegar, honey, and the remaining half tablespoon of sesame oil together until well combined.
  4. Fry wonton wrappers: In a small pan, heat oil over medium heat. Lightly fry the wonton wrappers for 20-30 seconds on each side until they turn golden and crispy.
  5. Assemble the tacos: Fill each crispy wonton wrapper with cooked chicken and the prepared coleslaw mix. Drizzle with sweet chili sauce, then garnish with sesame seeds and chopped cilantro.
  6. Serve immediately, enjoying the crunchy and flavorful experience.
