A comforting dish combining rotini pasta with ground beef, tangy Rotel tomatoes, and creamy sauce.
Ingredients
- 8 oz rotini pasta
- 1 lb ground beef
- 1 can (10 oz) Rotel tomatoes
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Cook the rotini pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add ground beef, cooking until browned and seasoning with salt and pepper.
- Stir in the Rotel tomatoes and heavy cream. Bring to a simmer.
- Add cooked pasta to the skillet and mix well.
- Stir in the shredded cheese until melted and combined.
- Serve hot, garnished with parsley if desired.
Notes
For a vegetarian alternative, swap ground beef for black beans or lentils. Rinse pasta after draining to remove excess starch.
