Description

A comforting casserole with ground beef, vibrant vegetables, and a sweet cornbread topping, perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 can of diced tomatoes
  • 1 package of cornbread mix
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a skillet over medium heat and add the ground beef, onion, and red bell pepper. Cook until the beef is browned and the vegetables have softened.
  3. Incorporate the corn, black beans, diced tomatoes, chili powder, and cumin. Mix well, letting the spices blend for a minute or two.
  4. Prepare the cornbread mix according to package instructions.
  5. Spread the beef mixture evenly in a greased baking dish.
  6. Pour the cornbread batter over the beef mixture, covering it completely.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Bake for 25-30 minutes or until the cornbread layer turns golden brown and cooked through.
