Ingredients
- 1 cup + 2 tablespoons all-purpose flour
- 1 teaspoon cornstarch
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter (softened, at room temperature)
- 1/2 cup + 2 tablespoons granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 10 Oreo or chocolate sandwich cookies (coarsely chopped)
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper or silicone baking mats and set aside.
- Whisk together the flour, cornstarch, baking soda, baking powder, and salt in a small bowl. Set this dry mixture aside.
- Beat the softened butter and granulated sugar together in a large mixing bowl on medium speed until they combine smoothly.
- Add the egg and vanilla extract to the mixture, mixing until completely smooth without lumps.
- Reduce the mixer’s speed to low and gradually add the dry ingredients to the wet mixture, stirring until a thick cookie dough forms.
- Fold in the coarsely chopped chocolate sandwich cookies and white chocolate chips until evenly dispersed.
- Scoop rounded portions of dough using a small cookie scoop (about 2 tablespoons) and slightly press them down.
- Bake the cookies for 8 to 10 minutes or until the edges are set while the centers remain soft.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a cooling rack.
Notes
