Description

Delightful cookies combining creamy white chocolate and rich chocolate sandwich cookies, perfect for any occasion.

Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter (softened, at room temperature)
  • 1/2 cup + 2 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 10 Oreo or chocolate sandwich cookies (coarsely chopped)
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper or silicone baking mats and set aside.
  2. Whisk together the flour, cornstarch, baking soda, baking powder, and salt in a small bowl. Set this dry mixture aside.
  3. Beat the softened butter and granulated sugar together in a large mixing bowl on medium speed until they combine smoothly.
  4. Add the egg and vanilla extract to the mixture, mixing until completely smooth without lumps.
  5. Reduce the mixer’s speed to low and gradually add the dry ingredients to the wet mixture, stirring until a thick cookie dough forms.
  6. Fold in the coarsely chopped chocolate sandwich cookies and white chocolate chips until evenly dispersed.
  7. Scoop rounded portions of dough using a small cookie scoop (about 2 tablespoons) and slightly press them down.
  8. Bake the cookies for 8 to 10 minutes or until the edges are set while the centers remain soft.
  9. Cool the cookies on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

Chilling the dough for about 30 minutes can result in thicker cookies with a delightful chew. Experiment with different chocolate sandwich cookies for unique flavors.
