Description

A moist and fluffy coffee cake with a delightful cinnamon and brown sugar streusel topping, perfect for any gathering.


Ingredients

  • 1 egg
  • 1/4 cup vegetable or canola oil
  • 1 tsp vanilla extract
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cups flour
  • 2 tbsp melted butter
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp flour
  • 1/2 cup chopped walnuts (optional)
  • 3/4 cup powdered sugar (for icing)
  • 1 tbsp milk (for icing, extra if needed)


Instructions

  1. Mix the cake ingredients: In a mixing bowl, beat the egg, then add the oil, vanilla, and milk. Stir in the sugar until well blended. Combine the dry ingredients, including flour, baking powder, and salt, in another bowl. Gradually add this mixture to the wet ingredients until just combined.
  2. Prepare the topping: For the streusel, mix the melted butter, brown sugar, cinnamon, flour, and optional walnuts in a small bowl. Create a crumbly texture by using a fork or your fingers.
  3. Layer the cake: Pour half the cake batter into the prepared baking pan. Sprinkle half of the streusel topping over the batter. Add the remaining batter and top with the rest of the streusel.
  4. Bake: Place the pan in the preheated oven and bake for 30-35 minutes. The cake is done when a toothpick inserted in the center comes out clean.
  5. Cool and ice (optional): Allow the cake to cool in the pan for a few minutes, then transfer to a wire rack. If desired, whisk together the powdered sugar with milk to create a simple icing. Drizzle it over the cooled cake.

Notes

For a lighter texture, consider using cake flour instead of all-purpose flour. Serve with a dusting of powdered sugar or a drizzle of icing.
