Description
A vibrant blend of flavors with salmon fillets in a creamy coconut curry sauce, perfect for any dinner table.
Ingredients
- 2 salmon fillets
- 1 cup coconut milk
- 1 tablespoon curry powder
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- Rice or veggies, for serving
Instructions
- Heat vegetable oil in a pan over medium heat.
- Season the salmon fillets with salt and pepper.
- Add the salmon to the pan and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same pan, add finely chopped onion, garlic, and ginger. Sauté until the onion is translucent.
- Stir in the curry powder and cook for another minute.
- Pour in the coconut milk and let it simmer for a few minutes.
- Add the cooked salmon back into the pan and coat it in the sauce.
- Serve with rice and/or veggies.
Notes
For added flavor, consider marinating the salmon in coconut milk and curry powder for 30 minutes before cooking.
