Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Whisk together the flour, baking powder, salt, and ground cinnamon in another bowl.
- Add the dry ingredients to the wet mixture and mix until combined.
- Roll the dough into small balls and coat in a mixture of cinnamon and sugar.
- Place the cookies onto a baking sheet lined with parchment paper, spacing them out.
- Bake for 10-12 minutes or until lightly golden.
