Description

A comforting casserole featuring layers of ground beef, russet potatoes, and melted cheese, perfect for family dinners.

Ingredients

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 5–6 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional, for extra meltiness)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter.
  2. Brown the ground beef with the chopped onion in a skillet until fully cooked. Drain any excess fat from the pan.
  3. Stir in minced garlic, salt, black pepper, and paprika, allowing everything to cook together briefly.
  4. Whisk together the cream of mushroom soup and milk in a bowl until smooth, creating your sauce.
  5. Assemble the casserole by layering half of the sliced potatoes on the bottom of the greased dish.
  6. Spread half of the beef mixture over the potatoes. Pour half of the sauce over the beef and sprinkle with 1 cup of cheddar cheese.
  7. Repeat the layers with the remaining potatoes, beef mixture, sauce, and finish with the rest of the cheddar and optional mozzarella.
  8. Cover with foil and bake for 45 minutes. Then, remove the foil and bake uncovered for an additional 15–20 minutes, until potatoes are tender and cheese is bubbly and golden.
  9. Let the casserole rest for 5 minutes before serving. Serve with a green salad or steamed veggies for a complete meal.

Notes

Consider adding diced vegetables like bell peppers or mushrooms for extra flavor. Let the casserole rest to set before serving.
