Ingredients
- 1 pound asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 8 ounces fresh mozzarella, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the trimmed asparagus and halved cherry tomatoes on a baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Roast in the preheated oven for about 15-20 minutes, or until the asparagus is tender.
- Remove from the oven and top with diced mozzarella.
- Drizzle with balsamic glaze and garnish with fresh basil if desired.
- Serve warm as a side dish or light lunch.
Notes
For best results, choose firm and bright green asparagus. Customize by adding garlic or different vegetables if desired.
