Description

A vibrant and flavorful roasted asparagus dish paired with cherry tomatoes and creamy mozzarella, drizzled with balsamic glaze.


Ingredients

  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the trimmed asparagus and halved cherry tomatoes on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast in the preheated oven for about 15-20 minutes, or until the asparagus is tender.
  5. Remove from the oven and top with diced mozzarella.
  6. Drizzle with balsamic glaze and garnish with fresh basil if desired.
  7. Serve warm as a side dish or light lunch.

Notes

For best results, choose firm and bright green asparagus. Customize by adding garlic or different vegetables if desired.
