  • 2 large egg whites (room temperature)
  • 2 tablespoons canola oil
  • â…“ cup milk (room temperature)
  • 1 teaspoon vanilla extract
  • ¼ cup rainbow sprinkles for decoration
  • 1 stick unsalted butter (room temperature)
  • 1.5-2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1-2 tablespoons milk or cream
  • A pinch of salt for taste


Instructions

  1. Combine flour, cornstarch, salt, and baking powder in a mixing bowl.
  2. Cream together the room temperature butter and sugar until light and fluffy.
  3. Add egg whites, canola oil, milk, and vanilla to the mixture and blend until fully incorporated.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in the rainbow sprinkles gently.
  6. Pour the batter evenly into greased baking pans and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool completely before frosting.
