Delightful finger-sized treats inspired by the classic Boston cream pie, featuring creamy vanilla pudding, rich chocolate ganache, and crunchy Nilla Wafers.
Ingredients
- 1 (3.4 oz) box vanilla instant pudding mix
- 1 cup cold milk
- 1 cup heavy whipping cream (divided)
- 3 tbsp powdered sugar
- 1 cup semi-sweet chocolate chips
- 70 Nilla Wafers (divided)
Instructions
- Combine the vanilla pudding mix with the cold milk in a medium mixing bowl and whisk thoroughly to remove lumps. Set aside for 5 minutes to thicken.
- Whip ½ cup of heavy whipping cream with powdered sugar until stiff peaks form. Gently fold this whipped cream into the thickened vanilla pudding.
- Transfer the combined pudding mixture into a piping bag and chill in the fridge.
- Microwave the remaining heavy whipping cream with chocolate chips for about 45 seconds until hot, then stir until smooth to create the ganache.
- Lay half of the Nilla Wafers on a lined baking sheet, flat side facing up. Pipe a dollop of the pudding filling onto each wafer and top with another wafer to create a sandwich.
- Squeeze ganache on top of each cookie sandwich and smooth out if necessary.
- Chill the assembled cookie bites in the fridge for at least 30 minutes or enjoy immediately.
Notes
Chill pudding mixture before assembly for better piping results. Monitor chocolate ganache closely to avoid boiling.
