Description

A nostalgic Southern dessert featuring ripe bananas in a buttery, gooey batter that evokes warm memories of family gatherings and summer evenings.

Ingredients

  • 5 ripe bananas, sliced
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup self-rising flour
  • 1 cup whole milk
  • ½ cup sugar
  • ½ teaspoon ground nutmeg (optional)

Optional toppings:

  • Vanilla ice cream
  • Whipped cream
  • Chopped pecans or walnuts
  • Caramel drizzle

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish lightly with butter or nonstick spray.
  2. Combine the sliced bananas, sugar, melted butter, vanilla extract, cinnamon, and salt in a large mixing bowl. Stir gently until the bananas are well coated, then set aside to allow the sugar to slightly dissolve.
  3. Whisk together the self-rising flour, milk, sugar, and optional nutmeg in a separate bowl until just combined. Do not overmix; some small lumps are okay.
  4. Pour the batter evenly into the prepared baking dish without stirring it once it’s in the pan.
  5. Spoon the banana mixture evenly over the batter, distributing it well without stirring.
  6. Place the dish on the center oven rack and bake for 45–50 minutes, or until the top is golden brown and the edges are bubbly. The center should spring back lightly when touched.
  7. Let the cobbler rest for about 10 minutes before serving, allowing the filling to set slightly while remaining warm and gooey.

Notes

Serve warm for the best experience. Topping with vanilla ice cream or whipped cream enhances the dessert.
