  • – 2 Tbsp. (30 ml) olive oil
  • – 1/2 large yellow onion, diced
  • – 2 stalks celery, diced
  • – 1 red bell pepper, seeded and diced
  • – 3 cloves garlic, pressed or minced
  • – 1 lb. (454 g) ground beef
  • – 1 recipe chili seasoning*
  • – 3 cups (710 ml) chicken broth (or 2 cups for a thicker chili)
  • – 2, 15 oz. (425 g) cans petite diced tomatoes, not drained
  • – 1, 15 oz. (425 g) can 100% pure pumpkin
  • – 1, 15 oz. (425 g) can kidney beans, drained and rinsed
  • – 1, 15 oz. (425 g) can pinto beans, drained and rinsed
  • – 1, 15 oz. (425 g) can black beans, drained and rinsed
  • – Garnish ideas: sour cream, cilantro, avocado, cheddar cheese, red onion, chips


Instructions

  1. Warm the olive oil in a large pot or Dutch oven. Introduce the diced onions, celery, and bell pepper, cooking them until they release their aroma, about 5-7 minutes. Mix in the minced garlic and combine for roughly 30 seconds.
  2. Incorporate the ground beef, cooking it until the pink hue disappears.
  3. Blend in the chili seasoning, ensuring it is well mixed.
  4. Add the rest of the ingredients, bringing the mixture to a rolling boil. Lower the heat to maintain a gentle simmer, uncovered, for a minimum of 30 minutes, stirring now and then.
  5. Sample the chili, adjust the flavors to your liking, and adorn with your choice of toppings. Serve it hot and relish the dish!
