Ingredients
- – 2 Tbsp. (30 ml) olive oil
- – 1/2 large yellow onion, diced
- – 2 stalks celery, diced
- – 1 red bell pepper, seeded and diced
- – 3 cloves garlic, pressed or minced
- – 1 lb. (454 g) ground beef
- – 1 recipe chili seasoning*
- – 3 cups (710 ml) chicken broth (or 2 cups for a thicker chili)
- – 2, 15 oz. (425 g) cans petite diced tomatoes, not drained
- – 1, 15 oz. (425 g) can 100% pure pumpkin
- – 1, 15 oz. (425 g) can kidney beans, drained and rinsed
- – 1, 15 oz. (425 g) can pinto beans, drained and rinsed
- – 1, 15 oz. (425 g) can black beans, drained and rinsed
- – Garnish ideas: sour cream, cilantro, avocado, cheddar cheese, red onion, chips
Instructions
- Warm the olive oil in a large pot or Dutch oven. Introduce the diced onions, celery, and bell pepper, cooking them until they release their aroma, about 5-7 minutes. Mix in the minced garlic and combine for roughly 30 seconds.
- Incorporate the ground beef, cooking it until the pink hue disappears.
- Blend in the chili seasoning, ensuring it is well mixed.
- Add the rest of the ingredients, bringing the mixture to a rolling boil. Lower the heat to maintain a gentle simmer, uncovered, for a minimum of 30 minutes, stirring now and then.
- Sample the chili, adjust the flavors to your liking, and adorn with your choice of toppings. Serve it hot and relish the dish!
Notes
- For a lighter alternative, you can use ground turkey or chicken instead of ground beef.
- Adjust the amount of chili seasoning to your taste preference.
- Enhance the flavor by adding lime juice or smoked paprika for a delicious twist.
