Ingredients
- ¾ cup cottage cheese
- 1 egg
- ½ teaspoon vanilla extract
- ¼ cup blueberries (fresh or frozen)
- Optional: 1 tablespoon almond flour
- Optional: ½ teaspoon sweetener of choice
- Optional: Pinch of cinnamon or lemon zest
Instructions
- Preheat your oven to 350°F (175°C).
- Combine ¾ cup cottage cheese, 1 egg, and ½ teaspoon vanilla extract in a small bowl. If desired, mix in the optional almond flour, sweetener, and cinnamon or lemon zest.
- Whisk the mixture until smooth.
- Fold in ¼ cup blueberries gently.
- Pour the mixture into a ramekin or small oven-safe dish.
- Top with extra blueberries if desired.
- Bake for 25–28 minutes until golden on top and just set in the center.
- Allow it to cool for 5 minutes before enjoying warm or chilled.
Notes
Use fresh blueberries when in season for the best flavor. Store leftovers in an airtight container for 3–4 days.
