Description

Delightful baked breakfast bowls combining protein-rich cottage cheese and fresh blueberries for a nutritious start to your day.


Ingredients

  • ¾ cup cottage cheese
  • 1 egg
  • ½ teaspoon vanilla extract
  • ¼ cup blueberries (fresh or frozen)
  • Optional: 1 tablespoon almond flour
  • Optional: ½ teaspoon sweetener of choice
  • Optional: Pinch of cinnamon or lemon zest


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine ¾ cup cottage cheese, 1 egg, and ½ teaspoon vanilla extract in a small bowl. If desired, mix in the optional almond flour, sweetener, and cinnamon or lemon zest.
  3. Whisk the mixture until smooth.
  4. Fold in ¼ cup blueberries gently.
  5. Pour the mixture into a ramekin or small oven-safe dish.
  6. Top with extra blueberries if desired.
  7. Bake for 25–28 minutes until golden on top and just set in the center.
  8. Allow it to cool for 5 minutes before enjoying warm or chilled.
