Description
A traditional Filipino chicken adobo recipe that brings families together with its rich, tangy flavors and aromatic ingredients.
Ingredients
- 2 lbs chicken
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1/2 cup water
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 tablespoon sugar
- Salt to taste
- 2 tablespoons cooking oil
Instructions
- Combine chicken, soy sauce, garlic, and peppercorns in a bowl. Marinate for at least 30 minutes.
- Heat oil in a pot over medium heat. Add the marinated chicken (reserve the marinade) and brown on all sides.
- Add vinegar and let it boil without stirring for 2-3 minutes.
- Pour in the reserved marinade, water, bay leaves, and sugar. Stir and bring to a boil.
- Lower the heat and simmer for about 30-40 minutes, or until the chicken is tender.
- Season with salt to taste and serve hot over rice.
Notes
Longer marination enhances flavor; adjust vinegar and soy sauce to taste.
