Description

A traditional Filipino chicken adobo recipe that brings families together with its rich, tangy flavors and aromatic ingredients.


Ingredients

  • 2 lbs chicken
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup water
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon sugar
  • Salt to taste
  • 2 tablespoons cooking oil


Instructions

  1. Combine chicken, soy sauce, garlic, and peppercorns in a bowl. Marinate for at least 30 minutes.
  2. Heat oil in a pot over medium heat. Add the marinated chicken (reserve the marinade) and brown on all sides.
  3. Add vinegar and let it boil without stirring for 2-3 minutes.
  4. Pour in the reserved marinade, water, bay leaves, and sugar. Stir and bring to a boil.
  5. Lower the heat and simmer for about 30-40 minutes, or until the chicken is tender.
  6. Season with salt to taste and serve hot over rice.

Notes

Longer marination enhances flavor; adjust vinegar and soy sauce to taste.
