Description

A vibrant and flavorful side dish of grilled asparagus, zucchini, and squash that captures the essence of summer gatherings.


Ingredients

  • 1 bunch of asparagus
  • 2 medium zucchinis
  • 2 medium yellow squashes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • Juice of 1 lemon (optional)


Instructions

  1. Rinse the asparagus, zucchini, and squash under cold water. Trim the asparagus by cutting off the tough ends.
  2. Slice the zucchinis and yellow squashes into thin rounds.
  3. Combine the asparagus, zucchini, and squash in a large bowl. Drizzle with olive oil and season with salt, pepper, and optional garlic powder. Toss to coat evenly.
  4. Preheat a grill or stovetop grill pan over medium-high heat.
  5. Grill the vegetables for 5-7 minutes, turning occasionally, until they are tender and charred.
  6. Remove from the grill and squeeze lemon juice over the top if desired.
  7. Serve warm as a side dish.
