Description

A refreshing salad of chow mein noodles and vibrant vegetables, topped with a creamy peanut dressing.


Ingredients

  • 8 oz chow mein noodles
  • 1 bell pepper, sliced
  • 1 cup carrots, julienned
  • 1 cucumber, sliced
  • 1/2 cup chopped peanuts
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar

Instructions

  1. Cook the chow mein noodles according to package instructions, then rinse under cold water.

  3. Whisk together the ingredients for the peanut dressing in a separate small bowl until smooth.
