Ingredients
- 1 pound (454 g) boneless, skinless chicken breasts (about 450 grams)
- 2 tablespoons (30 ml) olive oil (about 30 milliliters)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons (10 ml) ground cumin (about 4 grams)
- 1 teaspoon (5 ml) ground coriander (about 2 grams)
- 1 teaspoon (5 ml) dried oregano (about 1 gram)
- 1/2 teaspoon (3 ml) cayenne pepper (about 1 gram)
- 1/2 teaspoon (3 ml) ground black pepper (about 1 gram)
- 4 cups (960 ml) chicken broth (about 950 milliliters)
- 2 cans (15 ounces (425 g) each) white beans, drained and rinsed (about 850 grams total)
- 1 can (4 ounces (113 g)) chopped green chiles (about 115 grams)
- 1 cup (240 ml) frozen corn (about 150 grams)
- 1 tablespoon (15 ml) lime juice (about 15 milliliters)
- Salt to taste
- 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
- Optional toppings: diced avocado, sliced jalapeños, shredded cheese, sour cream
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add the chicken breasts and cook until browned on both sides, about 5 minutes per side.
- Remove the chicken from the pot and set aside.
- Add the remaining 1 tablespoon of olive oil to the pot.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, ground cumin, ground coriander, dried oregano, cayenne pepper, and ground black pepper.
- Cook the spices and garlic for about 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Return the chicken breasts to the pot.
- Cover the pot and let the chicken simmer for about 15 minutes.
- Remove the chicken and shred it with two forks.
- Return the shredded chicken to the pot.
- Add the drained and rinsed white beans, chopped green chiles, and frozen corn.
- Stir well and bring the mixture to a simmer.
- Simmer uncovered for 10-15 minutes to allow flavors to blend.
- Stir in the lime juice and season with salt to taste.
- Remove from heat and stir in the chopped fresh cilantro.
- Serve hot with optional toppings such as diced avocado, sliced jalapeños, shredded cheese, or sour cream.
