  • 2 cans (15 ounces (425 g) each) white beans, drained and rinsed (about 850 grams total)
  • 1 can (4 ounces (113 g)) chopped green chiles (about 115 grams)
  • 1 cup (240 ml) frozen corn (about 150 grams)
  • 1 tablespoon (15 ml) lime juice (about 15 milliliters)
  • Salt to taste
  • 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
  • Optional toppings: diced avocado, sliced jalapeños, shredded cheese, sour cream

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side.
  3. Remove the chicken from the pot and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the pot.
  5. Add the chopped onion and sauté until translucent, about 5 minutes.
  6. Stir in the minced garlic, ground cumin, ground coriander, dried oregano, cayenne pepper, and ground black pepper.
  7. Cook the spices and garlic for about 1 minute until fragrant.
  8. Pour in the chicken broth and bring to a simmer.
  9. Return the chicken breasts to the pot.
  10. Cover the pot and let the chicken simmer for about 15 minutes.
  11. Remove the chicken and shred it with two forks.
  12. Return the shredded chicken to the pot.
  13. Add the drained and rinsed white beans, chopped green chiles, and frozen corn.
  14. Stir well and bring the mixture to a simmer.
  15. Simmer uncovered for 10-15 minutes to allow flavors to blend.
  16. Stir in the lime juice and season with salt to taste.
  17. Remove from heat and stir in the chopped fresh cilantro.
  18. Serve hot with optional toppings such as diced avocado, sliced jalapeños, shredded cheese, or sour cream.

Notes

  • For a more flavorful broth, use homemade chicken broth instead of store-bought.
  • Add a smoky touch by using fire-roasted green chiles.
  • Customize your toppings with ingredients like salsa or crispy tortilla strips for a personal touch.
