A delicious and easy-to-make zero carb yogurt bread that serves as a perfect low-carb substitute in your meals.
Ingredients
- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (preferably aluminum-free)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- Optional: ½ cup finely ground almond flour
Instructions
- Preheat the oven to 350°F (175°C). Prepare a loaf pan by lining it with parchment paper or greasing it thoroughly.
- Whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) in a large bowl until the mixture appears smooth and creamy.
- Incorporate the baking powder, salt, and xanthan gum or psyllium husk powder. If using almond flour, mix it in at this stage. Continue mixing until the batter is slightly thickened.
- Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 35–45 minutes, until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room-temperature ingredients and don’t over-mix the batter. Experiment with different fats for varied taste.
