Description

A delicious and easy-to-make zero carb yogurt bread that serves as a perfect low-carb substitute in your meals.


Ingredients

  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • 1 tablespoon baking powder (preferably aluminum-free)
  • ¼ cup melted butter or coconut oil
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • Optional: ½ cup finely ground almond flour


Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a loaf pan by lining it with parchment paper or greasing it thoroughly.
  2. Whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) in a large bowl until the mixture appears smooth and creamy.
  3. Incorporate the baking powder, salt, and xanthan gum or psyllium husk powder. If using almond flour, mix it in at this stage. Continue mixing until the batter is slightly thickened.
  4. Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.
  5. Bake in the preheated oven for 35–45 minutes, until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room-temperature ingredients and don’t over-mix the batter. Experiment with different fats for varied taste.
