Ingredients
- 1/2 lb ground beef
- 3/4 cup pale ale
- 1 cup Velveeta cheese, cubed
- 1 cup shredded pepper jack cheese
- 1 can Rotel tomatoes (undrained)
- 1 can black beans, rinsed and drained
- 1/2 red onion, diced
- 1/4 cup fresh cilantro, chopped
- Salt, to taste
- Pepper, to taste
- Red pepper flakes (optional)
Instructions
- Brown the ground beef in a large skillet over medium-high heat, then drain excess grease.
- Season the beef with salt, pepper, and red pepper flakes (if using).
- Pour in the pale ale and simmer for 4-5 minutes to concentrate the flavors.
- Lower the heat to medium-low and add Velveeta and pepper jack cheeses, stirring until melted.
- Stir in the undrained Rotel tomatoes and fold in the black beans.
- Cook for an additional 5 minutes, stirring occasionally, until heated through.
- Serve immediately with tortilla chips and optional garnishes as desired.
