Description

A rich, cheesy dip blending comfort food with a touch of Tex-Mex flair, perfect for gatherings and game days.


Ingredients

  • 1/2 lb ground beef
  • 3/4 cup pale ale
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded pepper jack cheese
  • 1 can Rotel tomatoes (undrained)
  • 1 can black beans, rinsed and drained
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes (optional)


Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, then drain excess grease.
  2. Season the beef with salt, pepper, and red pepper flakes (if using).
  3. Pour in the pale ale and simmer for 4-5 minutes to concentrate the flavors.
  4. Lower the heat to medium-low and add Velveeta and pepper jack cheeses, stirring until melted.
  5. Stir in the undrained Rotel tomatoes and fold in the black beans.
  6. Cook for an additional 5 minutes, stirring occasionally, until heated through.
  7. Serve immediately with tortilla chips and optional garnishes as desired.
