Description

A nostalgic beef stew made with tender beef chuck, vibrant carrots, and hearty potatoes, perfect for cozy family dinners.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season beef cubes with salt and pepper, then brown in the pot until a crust forms. Remove and set aside.
  3. Add onions and garlic to the pot, cooking until softened.
  4. Add carrots, potatoes, and herbs, stirring to combine.
