Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season beef cubes with salt and pepper, then brown in the pot until a crust forms. Remove and set aside.
- Add onions and garlic to the pot, cooking until softened.
- Add carrots, potatoes, and herbs, stirring to combine.
- Return beef to the pot, pour in the beef broth, and bring to a simmer.
- Cover and let the stew simmer for about 90 minutes, or until the beef is tender.
- Taste and adjust seasoning as necessary before serving.
