Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • ¾ cup extra virgin olive oil
  • ½ cup plain yogurt
  • ⅓ cup fresh orange juice
  • 2 tablespoons orange zest
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup sugar

Instructions

  2. Whisk together the dry ingredients: flour, baking powder, baking soda, and salt in a bowl.

  4. Add the orange juice, orange zest, and vanilla extract to the wet mixture.
  5. Whisk in the eggs one at a time until well incorporated.
  6. Gradually sprinkle the dry mixture into the wet mixture, stirring gently until just combined.
  7. Pour the batter into the prepared cake pan, spreading it evenly.

  9. Cool for at least 10 minutes before transferring to a wire rack.

Notes
