A delightful white forest cake layered with cherry filling and creamy white chocolate frosting, perfect for any special occasion.
Ingredients
- 3 cups cherries
- 6 tbsp granulated sugar
- 3/4 tsp almond extract
- 2 tbsp kirsch
- 1 and 1/2 tbsp corn starch
- 1 and 1/2 tbsp water
- 3 and 1/2 cup cake flour (approx. 385 grams)
- 1 tbsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1/2 cup + 2 tbsp salted butter, softened
- 1/2 cup vegetable oil
- 2 and 2/3 cup granulated sugar (approx. 543 grams)
- 7 large egg whites
- 1 and 1/2 tbsp vanilla extract
- 1/2 tsp almond extract
- 3/4 cup full-fat sour cream
- 1 and 1/2 cups milk
- 16 ounces finely chopped white chocolate (good quality)
- 7 ounces heavy cream
- 1 and 1/2 cups salted butter, softened
- 4 and 1/2 cups + 1 to 2 tbsp powdered sugar
- 2 and 1/4 tsp vanilla extract
- 3/4 tsp almond extract
- Pinch of salt
- 4 ounces cream cheese, softened
Instructions
- First, prepare the cherry sauce by combining water and cornstarch in a small bowl until dissolved. Wash and pit the cherries, then halve them. Cook the cherries with sugar, almond extract, and kirsch over medium heat for about 10-12 minutes. Stir occasionally until they soften, then add the cornstarch mixture to thicken. Chill the sauce.
- Sift the flour, baking powder, baking soda, and salt for the cake batter in a large bowl. In another bowl, cream the softened butter, vegetable oil, and sugar until fluffy. Gradually add the egg whites, then fold in sour cream, vanilla, and almond extract.
- Alternate adding the dry ingredients and milk, mixing gently. Divide the batter among prepared pans and bake at 350°F for 22-26 minutes until a toothpick comes out clean.
- Cool the cakes, then prepare the white chocolate ganache by combining chopped chocolate with heated heavy cream. Chill until thick but not solid.
- Make the frosting by mixing softened butter and powdered sugar, then gradually add cream cheese.
- Layer the cooled cakes with ganache and cherry filling, using crumb coat techniques and chilling for 30 minutes before final frosting.
Notes
For best results, chill individual layers before assembling, and consider garnishing with fresh cherries or chocolate shavings.
