Ingredients

  • – 2 tablespoons olive oil (30 ml)
  • – 1 small onion, peeled and chopped
  • – 2 (15-ounce) cans white beans, drained and rinsed
  • – 4 cups (960 ml) beef broth
  • – 2 cups (480 ml) water
  • – 2 cups (480 ml) kale, stems removed and torn into 1″ pieces
  • – Salt and freshly ground black pepper


Instructions

  1. Warm the olive oil in a 3-quart pot over medium-high heat until it starts to shimmer. Add the chopped onion and cook until it becomes soft, which should take around 5 minutes.
  2. While the onion cooks, in a small bowl, mash one can of the white beans. Pour the mashed beans, beef broth, and water into the pot with the softened onion and bring the mixture to a boil.
  3. Mix in the remaining whole beans and the kale. Lower the heat, partially cover the pot, and let it simmer for about 20 minutes, or until the kale is tender. Adjust the seasoning with salt and pepper to your liking (I suggest 1 teaspoon of salt and ½ teaspoon of pepper).

Notes

  • Consider using vegetable or chicken broth for added flavor. Blend a portion of the soup for a creamier texture. Add fresh herbs like thyme or rosemary for a fragrant touch.
