Description

A vibrant and comforting side dish made with roasted sweet potatoes, walnuts, and a maple syrup glaze, infused with hints of cinnamon and thyme.


Ingredients

  • 3 medium sweet potatoes
  • ⅓ cup melted unsalted butter
  • 1.5 teaspoons cinnamon (divided)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ⅓ cup maple syrup + 2 tablespoons
  • ⅓ cup chopped walnuts
  • 1 teaspoon thyme


Instructions

  1. Clean and cut the sweet potatoes into ½-inch thick rounds.
  2. Preheat your oven to 200°C (400°F).
  3. In a mixing bowl, combine sweet potato slices with melted butter, 1 teaspoon of cinnamon, salt, and pepper. Mix thoroughly.
  4. Lay the seasoned sweet potato slices in a single layer on a baking tray.
  5. Bake for 25–30 minutes, checking for fork tenderness.
  6. Mix maple syrup, chopped walnuts, remaining ½ teaspoon of cinnamon, and thyme in a bowl.
  7. Once baked, top each sweet potato slice with about 1 teaspoon of the walnut mixture.
  8. Return the tray to the oven and bake for another 8–10 minutes until caramelized.

Notes

Use fresh sweet potatoes and high-quality maple syrup for best results. Adjust spices according to preference.
