A healthier twist on pizza using cottage cheese for a nutritious flatbread base.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian herb mix
- Salt and black pepper to taste
- 2/3 cup pizza sauce
- 3.5 ounces grated cheese (Gouda, Edam, or mozzarella)
- 2 ounces pepperoni
Instructions
- Preheat your oven to 350°F (180°C).
- Combine the cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix in a blender and blend until smooth.
- Line a baking sheet with parchment paper and pour the mixture onto it, spreading it into a thin circle.
- Bake for 30 minutes or until the flatbread is golden brown.
- Increase the oven temperature to 400°F (200°C).
- Spread the pizza sauce over the baked flatbread, then top it with grated cheese and pepperoni.
- Bake for an additional 8-10 minutes until the cheese melts and is bubbly.
Notes
For a vegetarian option, consider using plant-based pepperoni or omitting it altogether. Experiment with various cheeses and toppings to customize your pizza.
