Description

Delicious venison shank tacos paired with a refreshing apple slaw for a delightful culinary experience.


Ingredients

  • 2 pounds venison shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 6-8 corn tortillas
  • 1 apple, shredded
  • 1 cup green cabbage, shredded
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the venison shanks and brown on all sides.
  2. Remove the shanks and sauté onion and garlic until softened.
  3. Return the venison to the pot, add chili powder, cumin, salt, and pepper, along with enough water to cover the meat.
  4. Simmer for 120-180 minutes or until the meat is tender and can be shredded.
  5. While the meat cooks, mix the shredded apple, cabbage, cilantro, lime juice, and salt in a bowl to create the apple slaw.
  6. Once the venison is cooked, shred the meat and serve it in warmed corn tortillas topped with apple slaw.

Notes

Allow the slaw to chill for a few hours to enhance the flavors. Warm tortillas before serving for added comfort.
