Description

Ingredients

  • Venison steaks (1-2 lbs)
  • Olive oil (2-3 tbsp)
  • Fresh rosemary (1 tbsp, chopped)
  • Garlic (2 cloves, minced)
  • Sea salt (to taste)
  • Freshly ground black pepper (to taste)


Instructions

  1. Trim any excess fat from the venison steaks.
  2. Combine olive oil, garlic, rosemary, salt, and pepper in a bowl to create a marinade.
  3. Place the venison steaks in a resealable bag. Pour the marinade over the steaks, seal the bag, and press out the air.
  4. Marinate in the refrigerator for at least four hours or overnight.
  5. Heat a skillet over medium-high heat. Remove the steaks from the marinade and let sit at room temperature for 30 minutes.
  6. Sear the steaks for about 3-4 minutes on each side for medium-rare doneness.
  7. Remove from heat and rest for 5 minutes before slicing and serving.

Notes

For best results, use a meat thermometer to achieve an internal temperature of 130-135°F for medium-rare. Resting the steaks after cooking allows for better moisture retention.
