Ingredients

  • BBQ Rub
  • 140 g salt (160 ml)
  • 30 g granulated garlic (60 ml)
  • 15 g ground black pepper (30 ml)
  • 120 g chili powder (240 ml)
  • 30 g cumin (30 ml)
  • 30 g Hungarian paprika (30 ml)
  • 15 g smoked paprika (30 ml)
  • 10 g onion powder (10 ml)
  • 15 g ground mustard (15 ml)
  • 5 g cayenne (5 ml)
  • 30 g oregano (30 ml)
  • 240 g brown sugar (480 ml)
  • BBQ Sauce
  • 480 ml ketchup
  • 60 g BBQ rub (see above)
  • 120 ml apple cider vinegar
  • 60 g brown sugar (60 ml)
  • 30 ml Worcestershire sauce
  • 80 ml molasses
  • 15 ml Dijon mustard
  • 30 ml lemon juice
  • 22 ml liquid smoke
  • 15 ml salt
  • 15 g ground black pepper


Instructions

  1. **BBQ Rub and Sauce**
  2. Combine all the ingredients in a mixing bowl and keep them in a sealed container in the fridge. It should stay fresh for approximately a week; longer if you skip the lemon juice.
  3. **The Ribs**
  4. Use a hacksaw or bone saw to cut a rack of game ribs across the bones, aiming for a strip of rib bones that is 4-6 inches wide.
  5. Divide these strips into segments containing 3 or 4 ribs each.
  6. Put the ribs in a pressure cooker or slow cooker and pour in just enough stock or water to immerse them.
  7. Cook at full pressure for half an hour. For a slow cooker, set it to high for 2 to 3 hours or low for 6 to 8 hours until the ribs are quite tender. The ideal venison rib will have meat that clings to the bone when lifted, but shakes off with a bit of force. Some firmness is acceptable.
  8. Get a grill ready at medium-high temperature, whether using gas or charcoal.
  9. Take the ribs from the slow cooker, allow them to cool, and then coat them thoroughly with the rub.
  10. Set the ribs on the grill.
  11. Since they’re pre-cooked, you just need to warm them up and lightly char the exterior.
  12. Once the ribs are crispy, about 10 minutes, slather them with the barbecue sauce, and keep cooking for another 1 to 2 minutes to let the sauce thicken and caramelize.
  13. Serve while hot.

Notes

  • For a spicier flavor, increase the amount of cayenne in the BBQ rub before applying to the ribs.
  • Adjust the brown sugar in the BBQ sauce to your desired level of sweetness.
  • To enhance the smoky taste, add more liquid smoke to the BBQ sauce or marinate the ribs in it before grilling.
