Ingredients

  • – 1 tablespoon (15 ml) vegetable oil
  • – 1 small red onion, diced (about 240 g)
  • – 4 large cloves garlic, minced
  • – 1 tablespoon (15 ml) balsamic vinegar
  • – 1 teaspoon (5 ml) salt
  • – 1 teaspoon (5 ml) dried oregano
  • – 1/2 teaspoon (3 ml) dried thyme
  • – 1/2 teaspoon (3 ml) dried basil
  • – 1/2 teaspoon (3 ml) ground black pepper
  • – 1/4 teaspoon (1 ml) dried tarragon
  • – 1 pound (454 g) ground beef
  • – 1 egg, or flax egg
  • – 1/4 cup (30 g) oat flour, *see note


Instructions

  1. Set your oven to 375°F to begin preheating.
  2. Pour vegetable oil into a pan and heat over medium flame. When the oil is hot, toss in the diced red onion and cook until it begins to soften, approximately 4 minutes. Stir in the balsamic vinegar, minced garlic, and dried herbs along with salt and pepper, cooking for another 2 minutes. Remove from heat and allow it to cool slightly.
  3. In the meantime, place the other ingredients into a large bowl. Add the cooled onion mixture to the bowl and blend everything together using clean hands until well mixed.
  4. Form the mixture into balls with a medium-sized cookie scoop and arrange them on a baking sheet.
  5. Place in the oven and bake for 22-25 minutes until the meatballs are thoroughly cooked and have a golden brown color.
  6. You can use them immediately or store them in the freezer for future use.

Notes

  • Use certified gluten-free oat flour or almond flour as a substitute for a gluten-free option.
  • Opt for lean ground beef to prevent excessive grease in the meatballs.
