Ingredients

  • 1 lb ground beef (450 g)
  • 4 large bell peppers
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup canned diced tomatoes (240 ml)
  • 1 cup canned kidney beans, drained and rinsed (240 ml)
  • 1 cup canned black beans, drained and rinsed (240 ml)
  • 2 tablespoons tomato paste (30 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 tablespoon chili powder (15 g)
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon paprika (5 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (2.5 g)
  • 1/2 teaspoon cayenne pepper (2.5 g)
  • 1/2 cup shredded mozzarella cheese (60 g)
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Place the peppers upright in a baking dish and set aside.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add chopped onion and sauté until translucent, about 5 minutes.
  6. Stir in minced garlic and cook for 1 minute until fragrant.
  7. Add ground venison to the skillet and cook until browned, about 5-7 minutes.
  8. Stir in diced tomatoes, kidney beans, black beans, and tomato paste.
  9. Add chili powder, cumin, paprika, salt, black pepper, and cayenne pepper.
  10. Mix well and let the mixture simmer for 10 minutes, stirring occasionally.
  11. Spoon the venison chili mixture into each bell pepper, filling them evenly.
  12. Cover the baking dish with aluminum foil.
  13. Bake in the preheated oven for 25 minutes.
  14. Remove the foil and sprinkle shredded cheddar cheese on top of each pepper.
  15. Return to the oven and bake for an additional 5-10 minutes until the cheese melts.
  16. Remove from the oven and let cool for a few minutes.
  17. Garnish with chopped fresh cilantro before serving.
