Ingredients

  • – 2 tablespoons olive oil (30 ml)
  • – 2 onions, chopped
  • – 1 green bell pepper, stemmed, seeded, and chopped
  • – 4 tablespoons chili powder (60 ml)
  • – 2 tablespoons ground cumin (30 ml)
  • – 1 tablespoon dried oregano (15 ml)
  • – 2 teaspoons chipotle chili powder (10 ml)
  • – 2 teaspoons dried thyme (10 ml)
  • – 1 teaspoon ground coriander (5 ml)
  • – Salt and freshly ground black pepper
  • – 8 cloves garlic, minced
  • – 2 pounds ground beef (900 g)
  • – 2 (15.5-ounce) cans kidney beans, drained and rinsed
  • – 2 (10-ounce) cans fire-roasted diced tomatoes with green chiles, undrained
  • – 1 (28-ounce) can tomato puree
  • – 1 bay leaf
  • – Shredded cheese and scallions and sour cream, for serving


Instructions

  1. In a large pot or Dutch oven, warm the olive oil over medium-high heat until it starts to ripple.
  2. Incorporate the onions, green bell pepper, chili powder, cumin, oregano, chipotle chili powder, thyme, coriander, along with half a teaspoon of salt and a quarter teaspoon of black pepper.
  3. Cook this mixture until the vegetables are tender, which should take about 7 to 10 minutes.
  4. Add the minced garlic and cook until its aroma is released, roughly 30 seconds.
  5. Introduce the ground beef, breaking it apart with a spoon, and cook until it loses its pink color, approximately 5 minutes.
  6. Mix in the kidney beans, fire-roasted diced tomatoes with green chiles, tomato puree, and bay leaf.
  7. Allow the mixture to come to a simmer, cover the pot, and let it cook for 30 minutes.
  8. Take off the lid and continue simmering for another 30 minutes.
  9. Remove the bay leaf and adjust the seasoning with additional salt and pepper to your taste.
  10. Serve the dish topped with shredded cheese, chopped scallions, and a dollop of sour cream.
