- – 1 (28-ounce) can tomato puree
- – 1 bay leaf
- – Shredded cheese and scallions and sour cream, for serving
Instructions
- In a large pot or Dutch oven, warm the olive oil over medium-high heat until it starts to ripple.
- Incorporate the onions, green bell pepper, chili powder, cumin, oregano, chipotle chili powder, thyme, coriander, along with half a teaspoon of salt and a quarter teaspoon of black pepper.
- Cook this mixture until the vegetables are tender, which should take about 7 to 10 minutes.
- Add the minced garlic and cook until its aroma is released, roughly 30 seconds.
- Introduce the ground beef, breaking it apart with a spoon, and cook until it loses its pink color, approximately 5 minutes.
- Mix in the kidney beans, fire-roasted diced tomatoes with green chiles, tomato puree, and bay leaf.
- Allow the mixture to come to a simmer, cover the pot, and let it cook for 30 minutes.
- Take off the lid and continue simmering for another 30 minutes.
- Remove the bay leaf and adjust the seasoning with additional salt and pepper to your taste.
- Serve the dish topped with shredded cheese, chopped scallions, and a dollop of sour cream.
Notes
- For a healthier option, substitute lean ground beef or ground turkey for regular ground beef.
- To add more heat, increase chipotle chili powder or include a dash of hot sauce.
- Customize toppings with avocado slices, jalapenos, or fresh cilantro for added freshness.
