Ingredients

- 1 cup (240 ml) beef or vegetable broth (240 milliliters)
- 2 tablespoons (30 ml) tomato paste (30 grams)
- 1 tablespoon (15 ml) chili powder (15 grams)
- 1 teaspoon (5 ml) ground cumin (5 grams)
- 1 teaspoon (5 ml) smoked paprika (5 grams)
- Salt and pepper to taste
- 2 cups (480 ml) elbow macaroni (200 grams)
- 1 cup (240 ml) shredded cheddar cheese (115 grams)
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the ground venison to the pot and cook until browned, breaking it apart with a spoon.
- Stir in the chopped green and red bell peppers and cook for 5 minutes.
- Add the diced tomatoes, kidney beans, and black beans to the pot.
- Pour in the beef or vegetable broth and add the tomato paste.
- Stir in the chili powder, ground cumin, and smoked paprika.
- Season with salt and pepper to taste, and stir well to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- While the chili simmers, cook the elbow macaroni according to the package instructions.
- Drain the macaroni and add it to the chili mixture.
