Ingredients

  • 1 tablespoon (15 ml) vegetable oil (15 milliliters)

  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (14.5 ounces (411 g)) diced tomatoes (411 grams)
  • 1 can (15 ounces (425 g)) kidney beans, drained and rinsed (425 grams)
  • 1 can (15 ounces (425 g)) black beans, drained and rinsed (425 grams)
  • 1 cup (240 ml) beef or vegetable broth (240 milliliters)
  • 2 tablespoons (30 ml) tomato paste (30 grams)
  • 1 tablespoon (15 ml) chili powder (15 grams)
  • 1 teaspoon (5 ml) ground cumin (5 grams)
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • Salt and pepper to taste
  • 2 cups (480 ml) elbow macaroni (200 grams)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)


Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute.
  4. Add the ground venison to the pot and cook until browned, breaking it apart with a spoon.
  5. Stir in the chopped green and red bell peppers and cook for 5 minutes.
  6. Add the diced tomatoes, kidney beans, and black beans to the pot.
  7. Pour in the beef or vegetable broth and add the tomato paste.
  8. Stir in the chili powder, ground cumin, and smoked paprika.
  9. Season with salt and pepper to taste, and stir well to combine.
  10. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  11. While the chili simmers, cook the elbow macaroni according to the package instructions.
  12. Drain the macaroni and add it to the chili mixture.
