Ingredients

  • 2 pounds (907 g) ground beef (907 grams)
  • 2 cups (480 ml) shredded cheddar cheese (200 grams)
  • 1 tablespoon (15 ml) kosher salt (15 grams)
  • 1 tablespoon (15 ml) black pepper (8 grams)
  • 2 teaspoons (10 ml) garlic powder (6 grams)
  • 2 teaspoons (10 ml) onion powder (6 grams)
  • 1 teaspoon (5 ml) paprika (2.3 grams)
  • 1 teaspoon (5 ml) cayenne pepper (2.3 grams)
  • 1 teaspoon (5 ml) coriander (2.3 grams)
  • 1 teaspoon (5 ml) mustard powder (2.3 grams)
  • 1/2 cup (120 ml) non-fat dry milk powder (50 grams)
  • 1/2 cup (120 ml) cold water (120 milliliters)


Instructions

  1. Preheat your oven to 200°F (93°C).
  2. In a large bowl, combine the ground venison and ground beef.
  3. Add the shredded cheddar cheese to the meat mixture.
  4. In a separate small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, cayenne pepper, coriander, and mustard powder.
  5. Sprinkle the spice mixture over the meat and cheese mixture.
  6. Add the non-fat dry milk powder to the mixture.
  7. Pour the cold water over the combined ingredients.
  8. Mix everything thoroughly until well blended and the spices are evenly distributed.
  9. Prepare a baking sheet by lining it with parchment paper or a non-stick baking mat.
  10. Using your hands or a meat stick maker, form the meat mixture into snack stick shapes.
  11. Place the formed snack sticks onto the prepared baking sheet, leaving space between each stick.
  12. Bake in the preheated oven for 1.5 to 2 hours, or until the internal temperature reaches 160°F (71°C).
  13. Allow the snack sticks to cool slightly before serving or storing.
  14. Store any leftovers in an airtight container in the refrigerator.
