Ingredients

  • 1 pound (454 g) (450 grams) beef, cubed
  • 2 tablespoons (30 ml) (30 milliliters) vegetable oil
  • 1 large sweet potato, peeled and diced
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) (5 grams) ground cumin
  • 1 teaspoon (5 ml) (5 grams) smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons (30 ml) (30 grams) fresh parsley, chopped
  • Optional: 2 eggs


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the cubed venison to the skillet.
  3. Season the venison with salt and black pepper to taste.
  4. Cook the venison until browned on all sides, about 5-7 minutes.
  5. Remove the venison from the skillet and set it aside.
  6. In the same skillet, add the remaining 1 tablespoon of olive oil.
  7. Add the diced sweet potato to the skillet.
  8. Cook the sweet potato for about 5 minutes, stirring occasionally.
  9. Add the chopped onion and diced red bell pepper to the skillet.
  10. Sauté the vegetables until they begin to soften, about 5 minutes.
  11. Add the minced garlic to the skillet and stir for about 1 minute.
  12. Sprinkle in the ground cumin and smoked paprika.
  13. Stir well to coat the vegetables with the spices.
  14. Return the cooked venison to the skillet.
  15. Stir to combine the venison with the vegetables.
  16. Cook the mixture for an additional 5 minutes to heat through.
  17. Taste and adjust the seasoning with more salt and pepper if needed.
  18. If using, crack the eggs into the skillet on top of the hash.
  19. Cover the skillet and cook until the eggs are set to your liking.
  20. Remove the skillet from heat.
  21. Sprinkle the chopped fresh parsley over the hash.
  22. Serve immediately.
