Description

A warm and hearty vegetable orzo soup that’s simple to make and filled with nutritious ingredients, perfect for chilly evenings.


Ingredients

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (like carrots, celery, peas)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Stir in the mixed vegetables and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Stir in the orzo pasta and dried oregano, then reduce the heat to a simmer.
  6. Cook for around 10 minutes or until the orzo is al dente.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley, if desired.
