Ingredients
- 1 cup orzo pasta
- 4 cups vegetable broth
- 2 cups mixed vegetables (like carrots, celery, peas)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent.
- Stir in the mixed vegetables and cook for about 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Stir in the orzo pasta and dried oregano, then reduce the heat to a simmer.
- Cook for around 10 minutes or until the orzo is al dente.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley, if desired.
