Ingredients
- 1 cup orzo pasta
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup zucchini, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
- Fresh herbs (such as basil or parsley) for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
- Stir in the carrots and celery, cooking for about 5 minutes until softened.
- Add the diced zucchini, diced tomatoes, and vegetable broth, bringing the mixture to a boil.
- Once boiling, add the orzo pasta and cook according to package instructions until al dente.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
For a creamier texture, consider blending part of the soup after cooking and then stir it back in. Experiment with different vegetables and herbs based on your preference.
