Description

A warm and comforting soup made with orzo pasta and an array of fresh vegetables, perfect for cozy evenings.


Ingredients

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh herbs (such as basil or parsley) for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
  2. Stir in the carrots and celery, cooking for about 5 minutes until softened.
  3. Add the diced zucchini, diced tomatoes, and vegetable broth, bringing the mixture to a boil.
  4. Once boiling, add the orzo pasta and cook according to package instructions until al dente.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs.

Notes

For a creamier texture, consider blending part of the soup after cooking and then stir it back in. Experiment with different vegetables and herbs based on your preference.
