Ingredients

  • 2 medium sweet potatoes (400g), peeled and cubed
  • 1 large carrot (150g), peeled and chopped
  • 2 tablespoon olive oil (30ml)
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 teaspoon (10 ml) smoked paprika
  • 1 teaspoon (5 ml) cumin
  • 1/2 teaspoon (3 ml) turmeric
  • 1 tablespoon (15 ml) dried basil
  • 1/2 tablespoon (8 ml) dried rosemary
  • 2 tablespoon (30 ml) nutritional yeast
  • 1/3 cup coconut milk, canned (80ml)
  • 1 1-inch piece ginger, peeled
  • 1 teaspoon (5 ml) salt
  • 1 tablespoon (15 ml) balsamic glaze, or balsamic vinegar
  • 1 tablespoon (15 ml) tamari
  • 1 cup vegetable broth (240ml)


Instructions

  1. Set your oven to 200°C (350°F) and prepare a baking sheet with parchment paper.
  2. Place the cubed sweet potatoes, chopped carrots, and half of the olive oil in a large bowl, mixing thoroughly. Then, spread them out on the prepared baking sheet and roast for 25 minutes.
  3. While the vegetables are roasting, pour the remaining olive oil into a pan and sauté the chopped onion and minced garlic for 5 minutes, until the onion turns golden.
  4. Once roasted, put the sweet potatoes and carrots into a blender. Add smoked paprika, cumin, turmeric, dried basil, dried rosemary, nutritional yeast, coconut milk, ginger, salt, balsamic glaze, tamari, vegetable broth, and the sautéed onion and garlic. Blend everything until you achieve a smooth consistency, then enjoy your soup.
