Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium butternut squash, peeled and cubed
- 2 medium carrots, sliced
- 1 teaspoon ground cumin (2.5 g)
- 1 teaspoon ground coriander (2.5 g)
- 1/2 teaspoon smoked paprika (1 g)
- 1/4 teaspoon ground black pepper (0.5 g)
- 4 cups vegetable broth (960 ml)
- 1 cup dried green or brown lentils (200 g)
- Salt, to taste
- Black pepper, to taste
- 1 can (14.5 oz) diced tomatoes (410 g)
- 1 cup kale or spinach, chopped (30 g)
- 2 tablespoons fresh lemon juice (30 ml)
- Fresh parsley or cilantro, chopped, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until it becomes translucent.
- Stir in the minced garlic and cook for 1 minute.
- Add the cubed butternut squash and sliced carrots to the pot.
- Sprinkle in the ground cumin, ground coriander, smoked paprika, and cayenne pepper.
- Stir well to coat the vegetables with the spices.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add the dried lentils to the pot.
- Season with salt and black pepper to taste.
- Reduce the heat to low and cover the pot.
- Simmer for about 25-30 minutes, or until the squash and lentils are tender.
- Stir in the diced tomatoes with their juices.
- Add the chopped kale or spinach to the soup.
- Cook for an additional 5 minutes, until the greens are wilted.
- Stir in the fresh lemon juice just before serving.
- Taste and adjust seasoning if necessary.
- Ladle the soup into bowls and garnish with chopped parsley or cilantro.
