Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, diced

  • 1 medium butternut squash, peeled and cubed
  • 2 medium carrots, sliced
  • 1 teaspoon ground cumin (2.5 g)
  • 1 teaspoon ground coriander (2.5 g)
  • 1/2 teaspoon smoked paprika (1 g)
  • 1/4 teaspoon ground black pepper (0.5 g)
  • 4 cups vegetable broth (960 ml)
  • 1 cup dried green or brown lentils (200 g)
  • Salt, to taste
  • Black pepper, to taste
  • 1 can (14.5 oz) diced tomatoes (410 g)
  • 1 cup kale or spinach, chopped (30 g)
  • 2 tablespoons fresh lemon juice (30 ml)
  • Fresh parsley or cilantro, chopped, for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until it becomes translucent.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Add the cubed butternut squash and sliced carrots to the pot.
  5. Sprinkle in the ground cumin, ground coriander, smoked paprika, and cayenne pepper.
  6. Stir well to coat the vegetables with the spices.
  7. Pour in the vegetable broth and bring the mixture to a boil.
  8. Add the dried lentils to the pot.
  9. Season with salt and black pepper to taste.
  10. Reduce the heat to low and cover the pot.
  11. Simmer for about 25-30 minutes, or until the squash and lentils are tender.
  12. Stir in the diced tomatoes with their juices.
  13. Add the chopped kale or spinach to the soup.
  14. Cook for an additional 5 minutes, until the greens are wilted.
  15. Stir in the fresh lemon juice just before serving.
  16. Taste and adjust seasoning if necessary.
  17. Ladle the soup into bowls and garnish with chopped parsley or cilantro.
