Deliciously moist and sweet vegan banana bread made from simple ingredients, perfect for breakfast or a snack.
Ingredients
- 3 ripe bananas (approximately 330 grams or 12 ounces, mashed)
- ⅓ cup almond milk (or any plant-based milk)
- ¼ cup olive oil (or another vegetable oil)
- ¾ cup sugar
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- A pinch of salt
Instructions
- Preheat the oven to 350°F (or 180°C). Prepare your loaf pan by lining it with parchment paper.
- In a large bowl, mash the 3 ripe bananas using a fork until smooth.
- Stir in ⅓ cup almond milk, ¼ cup olive oil, ¾ cup sugar, and 1 tablespoon vanilla extract until the mixture is well combined.
- Sift in 2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and a pinch of salt. Stir until just mixed; lumps are fine.
- Pour the batter into your prepared loaf pan.
- Bake the loaf for about 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for approximately 15 minutes. Then, remove from the pan and let it cool completely on a wire rack for at least an hour.
- Slice the bread with a bread knife into 0.8-inch or 2-cm thick pieces and enjoy.
Notes
Add chopped nuts or dairy-free chocolate chips for extra flavor and texture. Use spotty, overripe bananas for the best sweetness.
