Description

Deliciously moist and sweet vegan banana bread made from simple ingredients, perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas (approximately 330 grams or 12 ounces, mashed)
  • ⅓ cup almond milk (or any plant-based milk)
  • ¼ cup olive oil (or another vegetable oil)
  • ¾ cup sugar
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • A pinch of salt


Instructions

  1. Preheat the oven to 350°F (or 180°C). Prepare your loaf pan by lining it with parchment paper.
  2. In a large bowl, mash the 3 ripe bananas using a fork until smooth.
  3. Stir in ⅓ cup almond milk, ¼ cup olive oil, ¾ cup sugar, and 1 tablespoon vanilla extract until the mixture is well combined.
  4. Sift in 2 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and a pinch of salt. Stir until just mixed; lumps are fine.
  5. Pour the batter into your prepared loaf pan.
  6. Bake the loaf for about 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for approximately 15 minutes. Then, remove from the pan and let it cool completely on a wire rack for at least an hour.
  8. Slice the bread with a bread knife into 0.8-inch or 2-cm thick pieces and enjoy.

Notes

Add chopped nuts or dairy-free chocolate chips for extra flavor and texture. Use spotty, overripe bananas for the best sweetness.
