Ingredients
- 1/2 cup coconut flour
- 1/4 cup coconut oil (melted)
- 1/2 cup chopped almonds
- 1/4 cup sweetener (agave syrup or maple syrup)
- 1 cup vanilla protein powder
- 1/4 cup plant-based milk (almond, coconut, or any other)
- 1 teaspoon vanilla extract
- Pinch of salt
- Additional coconut flour for coating
Instructions
- In a medium bowl, combine coconut flour, protein powder, and salt.
- In another bowl, whisk together melted coconut oil, your chosen sweetener, plant-based milk, and vanilla extract.
- Pour the wet mixture into the dry ingredients, mixing until combined.
- Stir in the chopped almonds, ensuring they spread evenly throughout the mixture.
- Roll the mixture into balls, about one inch in diameter.
- If desired, roll each ball in additional coconut flour for coating.
- Place the protein balls on a parchment-lined tray.
- Refrigerate for at least 30 minutes to firm up.
