Description

A flavorful marinade combining citrus and smoky flavors, perfect for carne asada.


Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lime juice (about 4-6 limes)
  • 1/4 cup fresh orange juice (about 1 large orange)
  • 1/4 cup soy sauce
  • 6 garlic cloves, minced
  • 1 cup fresh cilantro, roughly chopped (stems and leaves)
  • 1/2 medium white onion, roughly chopped
  • 1 jalapeño pepper, finely minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • 1 teaspoon black pepper
  • 1/2 teaspoon sea salt


Instructions

  1. Combine all ingredients in a blender or food processor.
  2. Blend until smooth, about 30-60 seconds. Stop to scrape down the sides as needed.
  3. Pour the marinade over your chosen cut of meat (recommended: skirt steak or flank steak) in a large bowl or resealable bag, ensuring the meat is thoroughly coated.
  4. Marinate in the refrigerator for at least 2 hours, preferably overnight.
  5. When ready to cook, discard the used marinade, grill the meat, and enjoy.
