Ingredients
- 1 cup rolled oats
- 1/2 cup protein powder (vanilla or butterscotch flavored)
- 1/2 cup nut butter (peanut or almond)
- 1/3 cup honey or maple syrup
- 1/2 cup butterscotch chips
- 1/4 cup chopped nuts (optional)
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine rolled oats and protein powder.
- Add in nut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
- Fold in butterscotch chips and chopped nuts if using.
- Once the mixture is thoroughly mixed, refrigerate for about 30 minutes to firm up.
- After chilling, roll the mixture into small balls (about 1 inch in diameter).
- Store in an airtight container in the refrigerator for up to a week.
