Description

A warm and nourishing weight loss soup made with ground turkey and a variety of vegetables, perfect for a chilly evening.


Ingredients

  • 1 lb ground turkey
  • 4 cups vegetable broth
  • 2 cups chopped vegetables (like carrots, celery, bell peppers, zucchini)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the ground turkey over medium heat.
  2. Add the chopped onions and garlic, sautéing until softened.
  3. Stir in the chopped vegetables and cook for another 5 minutes.
  4. Pour in the vegetable broth and can of diced tomatoes.
  5. Add the oregano, thyme, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and simmer for 20-30 minutes, until the vegetables are tender.
  7. Adjust seasoning as needed and serve warm.

Notes

For a thicker soup, blend a portion of it after cooking. Adding a splash of lemon before serving brightens the flavor. Fresh herbs like parsley can enhance the dish.
