A warm and nourishing weight loss soup made with ground turkey and a variety of vegetables, perfect for a chilly evening.
Ingredients
- 1 lb ground turkey
- 4 cups vegetable broth
- 2 cups chopped vegetables (like carrots, celery, bell peppers, zucchini)
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground turkey over medium heat.
- Add the chopped onions and garlic, sautéing until softened.
- Stir in the chopped vegetables and cook for another 5 minutes.
- Pour in the vegetable broth and can of diced tomatoes.
- Add the oregano, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20-30 minutes, until the vegetables are tender.
- Adjust seasoning as needed and serve warm.
Notes
For a thicker soup, blend a portion of it after cooking. Adding a splash of lemon before serving brightens the flavor. Fresh herbs like parsley can enhance the dish.
