Description

A comforting and hearty tomato rice soup that warms the soul, perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup cooked rice
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Stir in the diced tomatoes and vegetable broth. Bring to a boil.
