Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 cup cooked rice
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Stir in the diced tomatoes and vegetable broth. Bring to a boil.
- Lower the heat and let it simmer gently for about 10 minutes.
- Add the cooked rice and dried basil. Season with salt and pepper as desired.
- Simmer for an additional 10 minutes, then ladle the soup into bowls and garnish with fresh parsley if desired.
