Ingredients

  • 8 slices of whole wheat bread
  • 1 pound (454 g) (450 grams) boneless, skinless chicken breast
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) (5 grams) paprika
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1/2 teaspoon (3 ml) (2.5 grams) cayenne pepper
  • 1/2 teaspoon (3 ml) (2.5 grams) salt
  • 1/4 teaspoon (1 ml) (1.25 grams) black pepper
  • 8 slices cheddar cheese
  • 1 cup (240 ml) mayonnaise
  • 1 tablespoon (15 ml) Dijon mustard
  • 2 cup (480 ml) s (60 grams) coleslaw mix
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 tablespoon (15 ml) (15 grams) sugar
  • 2 tablespoon s (30 ml) unsalted butter


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Coat the chicken breasts with olive oil and the spice mixture.
  4. Place the chicken on a baking sheet and bake for 20-25 minutes or until cooked through.
  5. Let the chicken cool slightly, then slice thinly.
  6. In a small bowl, combine mayonnaise and Dijon mustard.
  7. In another bowl, toss coleslaw mix with apple cider vinegar and sugar.
  8. Spread the mayonnaise mixture on one side of each slice of bread.
  9. Place a slice of cheddar cheese on four slices of bread.
  10. Layer sliced chicken on top of the cheese.
  11. Add coleslaw on top of the chicken.
  12. Place another slice of cheddar cheese over the coleslaw.
  13. Top with the remaining bread slices, mayonnaise side down.
  14. Melt butter in a skillet over medium heat.
  15. Grill each sandwich in the skillet until golden brown and the cheese melts, about 3-4 minutes per side.
  16. Remove from skillet, slice in half, and serve warm.
