Ingredients
- 2 lbs ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2-3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, sour cream, green onions, avocado slices, tortilla chips
Instructions
- Gather all of your ingredients and chop vegetables.
- In a large pot, cook the ground beef or turkey over medium heat until it’s fully brown.
- Add diced onion and bell pepper to the meat. Sauté until the onion becomes translucent, then add minced garlic.
- Stir in chili powder, cumin, paprika, salt, and black pepper, letting the spices toast slightly.
- Pour in the diced tomatoes, tomato sauce, and beef broth. Stir everything together until well combined.
- Bring the mixture to a gentle boil, then reduce the heat. Let it simmer for 30 minutes to meld the flavors.
- Stir in the rinsed kidney beans and pinto beans. Simmer for an additional 10 minutes.
- Sample the chili, adjusting seasoning as necessary.
- Ladle into bowls and top with extras like shredded cheese, sour cream, or avocado.
Notes
Let the chili rest to enhance flavors; chilling overnight is recommended for best results.
